Heart Healthy Baby Spinach Salad

This yummy salad contains vitamins, antioxidants, protein and no preservatives (because you make your own homemade, easy dressing)! Make this dinner on a hot summer night or a cozy winter evening. It is filling and delicious and can be made with different variations. It is a eHealthIQ team favorite!

Simple, Healthy Baby Spinach and Shrimp Salad

Serving size 2

1 organic bag of Baby spinach

½ cup Chopped pecans

1 Cucumber, sliced

Crumbled goat cheese

¾ lb of raw, peeled, de-veined Shrimp


Homemade balsamic dressing:

  • 3/4 cup extra-virgin Olive Oil
  • 3 tablespoons Balsamic Vinegar
  • 1 tablespoon Red Wine Vinegar
  • 1-2 tablespoons Dijon mustard
  • 1 tablespoon maple syrup
  • 2 tablespoons fresh herbs or 2 teaspoons dried (basil, oregano, chives, and thyme are all nice)
  • 1 teaspoon garlic powder
  • Generous squeeze of lemon juice
  • Generous pinch of sea salt and black pepper

Combine all ingredients, Wisk well with a fork. Once mixed, add to salad and mix all together


  • 3/4 pound raw peeled and deveined shrimp
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoon onion powder
  • 1 tablespoon ground cumin
  • Fresh chopped parsley
  • Few sprinkles of red pepper flakes (depending on how spicy you like)
  • Salt and pepper to taste


Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic and onion powder, cumin, red pepper flakes, and shrimp. Season with salt and pepper and cook shrimp 3 minutes or until just pink. Toss with chopped parsley. Remove shrimp add to salad.

Combine baby spinach, cucumbers, and pecans with homemade dressing. Then place cooked shrimp on top, sprinkle with goat cheese. Enjoy!
